Meatballs

Ingredients

1/2 cup bread crumbs organic gluten free

1/4 cup Orgainc or Raw whole Milk

2  pasture raised eggs

1/2 cup Romano cheese 

2  Organic Garlic cloves freshly pressed or chopped

1 tablespoon ground black pepper

1 pound pasture raised beef

1 pound Pork or Veal

1/4 cup Onion chopped or grated

1/3 cup Parsley or Basil

Olive Oil or Lard


Preparation

Put bread crumbs in a small bowl and pour the milk over them.  let them soak for 5 mins then add egg yolk, cheese, garlic, salt, and pepper.  Mix it all up in a bowl.


Put beef and pork with the onion in a large bowl and mix together with hands or a fork.   Then add the bread mixture and parsley/ basil.  Mix well you can premix and leave in the refrigerator or  start to make the balls. 


You want about 1/4 cup per ball, you can use a scoop to measure it out.  Roll the and put them on a baking sheet. 


After made you can either use Olive Oil or Lard to grease the pan and put them in and cooking them rolling them to evenly cook,  brown them on all sides.  Lower the heat and let them cook through or put them in the spaghetti sauce and cook.  Should be about 15 mins.  


You can also bake them in the oven pre heat 425 coat the baking sheet with lard or Olive Oil and back 10 mins and keep rotating them till cooked evenly.
